What is it?

The Chicken Supply is an extension of our home, your neighbor’s backyard party, a quick rendezvous with your best friend, a place where the food facilitates the experience. Our food is rooted in the taste and culture of the Filipino dining experience, where everyone who is anyone comes together to share a meal, a drink, a laugh, and maybe even the latest hot goss. We’re not fancy and we don’t care about courses. Tweezers are useless here and 3 stars are part of our flag and not an accolade. We cook in hopes that our food finds its way into whatever your vibe may be. Let the chicken supply you.

Short story time: (a rough retelling)

Paolo and Donnie have been good friends since culinary school. They always joked and talked about starting some sort of food business together. Fried chicken has always been one of Paolo’s favorite foods and thought to himself, “dude, fried chicken is tight, I’d like to open a place that does that all the time, let’s do it now!” Donnie, along with a lot of other people in Paolo’s life said, “hey guy, maybe relax and just cook for a bit and let’s get some experience under our belt.” As time went by, their restaurant paths went different directions. Donnie crushed it through the years and eventually became the head chef at Rione XIII. Paolo crushed it through the years and ended up becoming the left-hand man to Mark Schroder at Opus Co. 2020 got real weird and Donnie took some time to reflect and take care of the homestead. The lease at Opus Co. was ending soon and Paolo had always thought about taking over the space and when the opportunity presented itself he said, “let’s ride!” From there it seemed like perfect timing. Here we are!
